Super-easy, Healthy Spinach Dip

Steve recently bought us The Joy of Cooking. I've been poring over the book, savoring every moment. This weekend, I kind of went on a making-stuff spree. It all started with what you could call a chocolate cake, but I'll describe this more once I put on the finishing touches. With my enthusiasm came a desire to cook something with spinach, since we had almost a pound of fresh baby spinach left.  Since it was the Super Bowl (not like I care about football...just food!), I made a spinach dip and, of course, referred to the internet as well as to The Joy of Cooking.  Lots of recipes online asked for a disgusting amount of mayonnaise. Don't get me wrong: I love mayonnaise. But it kind of sickens me to think about eating a whole cup of it in a sitting. Something just seems not right about that.  Needless to say, I was very glad to see that the recipe in The Joy of Cooking did not call for any mayonnaise at all!  I didn't follow their recipe exactly, but here are the ingredients I used:

10 oz fresh spinach, boiled, squeezed dry, and chopped
1 cup fat free greek yogurt (unflavored)
1 cup light sour cream
3 green onion stalks, washed and chopped into skinny O's
2-3 teaspoons granulated garlic
2 tablespoons freshly grated Parmesan
2 teaspoons ground nutmeg
salt to taste

Then, all I needed to do was combine all of the ingredients into a medium sized bowl. Of course, I needed to break out the crackers to taste-test the dip to make sure I had enough salt and nutmeg.  My absolute favorite cracker is Kashi's TLC Pita Crisps. Nom. I could eat box after box of those suckers.

If you want to make the dip even healthier, substitute more of the yogurt in for the sour cream. I love greek yogurt because it is protein-packed and super-low in fat and sugar.  No sugared-up "strawberry" or "vanilla" flavoring. No fake-sugar weirdness. Just plain and simple greek yogurt to fill up the belly! I could talk about greek yogurt all day, but will restrain myself. I guess I could talk about spinach being healthy, but ... nah.

So good!! Eat it with crackers or fresh veggies or bread or whatever you want!
