Chickpea Summer Salad



It's nice having something healthy, cool and refreshing to snack on whenever the urge strikes. This chickpea salad is great because it is low in fat and calories but packed with flavor. It'll leave you satisfied and refreshed and you won't feel gross or guilty.  Another perk: no cooking required so you don't have to heat up the kitchen when your air conditioner is already struggling.

First mix together:
  • 3 T olive oil
  • 1 T lemon juice
Then add:
  • 2 16-ounce cans of garbanzo beans, drained
  • 1 cup (ish) of roughly chopped tomatoes (I like to use grape tomatoes to reduce the juiciness)
  • 1/2 cup of chopped cilantro or parsley
  • 1/3 cup of diced red onion
  • salt to taste
Mix together, then chill.
