Vietnamese Eggroll Noodle Salad

We ate these eggroll noodle salads last week, while the weather was still nice and warm in Minnesota. This is one of my faaavorite things to get when I go to Vietnamese restaurants. So refreshing ...and maybe healthy? I always ask my Mom to make this when I go home, but really it's not hard to make so I don't know what my deal is. As long as you have everything you need, assembly time is pretty quick for this salad.


Just layer:
  • cooked rice noodles (just boil them for a minute or so. don't overcook them!)
  • cucumber slices
  • carrot shreds
  • shredded lettuce
  • bean sprouts
  • mint bits
  • cilantro bits
  • hot egg rolls (cut them into bit size pieces so nothing will slow you down as you nom nom)
  • grilled beef
Then sprinkle over some sauce made of fish sauce. I didn't actually follow that recipe, but maybe I will in the future since I kind of suck at making the sauce. Shame. -_-
