Buffalo Chicken Blue Cheese Salad

This may come as a surprise, but I don't have a lot of self control when it comes to food. When I go to departmental happy hours at Buffalo Wild Wings, I usually end up eating some wings. I know they are fried and really unhealthy, but they just smell good and then they end up in my mouth. It's like there's a magnet in my mouth that's attracted to yummy foods. Once I get a taste, it's really hard for me to stop unless I'm full. But what is there to get full off besides more wings? Everything else on the menu is just as unhealthy and I'm already eating all the celery my friends have cast off. Sometimes I'm sadfacey and like "why did I eat twelve (or a thousand) wings?"

Buuuut what if I didn't have to be sadfacey? What if I could eat the stuff that tasted delicious and get full at the same time? What if I could make something that tasted just as good but was healthier? That would be pretty miraculous. Well, someone should call the miracle police because it's already happening! Not at Buffalo Wild Wings (as far as I know), but in my kitchen! Imagine a salad that has all the flavors of eating wings (namely buffalo sauce and blue cheese). Then stop imagining it and go make it because it's really easy. Thank you EatingWell for this wonderful, fast-n-easy salad!



For the blue cheese dressing, mash together in a small mason jar:

  • 1/2 cup crumbled blue cheese
  • 1/2 cup buttermilk
  • 2 teaspoons red wine vinegar
  • some freshly cracked black pepper
Never have buttermilk? Never fear. Make it out of normal milk and vinegar. I don't remember what a good ratio is but I did almost a half cup of buttermilk and one tablespoon vinegar. Let this sit for a couple minutes to thicken up before adding to the blue cheese.

For the buffalo chicken, sprinkle 
  • 3 tablespoons all purpose flour 
over 
  • 1.5 pounds of chicken breasts cut into bite-size cubes.
Heat a large, nonstick pan with a tablespoon of healthy (e.g. canola) oil on medium high, then add the chicken. Stir frequently for five minutes or until the chicken has just cooked through. Add
  • 3 tablespoons hot sauce
  • 1 tablespoon red wine vinegar
and cook for additional minute, stirring constantly to ensure the sauce evenly coats the chicken.

Then, throw together your favorite greens with celery, cucumber, and whatever you would like in your salad. Add some of the blue cheese dressing and toss to spread the delicious cheesy flavor throughout.  Top with the cooked chicken and more blue cheese crumbles. Enjoy!
