Roasted Red Peppers



It's easy to roast red peppers at home! Just wash a couple peppers off, dry them, then turn on your gas stovetop to medium-high. Now set your peppers on the burner and let them hang out for half a minute or until the skin begins to blacken a bit. Use your metal tongs to turn your peppers so that the entire skin chars.  The more you blacken your peppers, the easier it will be to remove the char later.

Once your peppers are thoroughly blackened, place them in a pot just large enough to contain them. Cover the lid and wait a few minutes while the steam continues to cook the peppers inside the pot.

Take the peppers out and cut into them to release the steam.  Once they cool down a bit, use your fingers to remove the charred skin and the seeds. Do not use water to rinse the peppers, or you'll rinse away the deliciousness! If you roasted them enough, the skin should slip off easily.

Voila! Beautiful, delicious, sweet, roasted peppers. Try them on pizza or in hummus!
