Kale and Two-Bean Soup

Oh hey! I'm back to eating food again! Well, I was eating PLENTY while I was away, but now I'm eating home-made food again. YAY!


Not the most popular kid in the class, but hater's gon hate. I already had a post about kale getting made fun of. On Monday, when my friend Josh and I were getting haircuts, she insisted that beans were gross. What!?! Beans are so delicious! They are one of the few healthy foods that taste so wonderful, you'd think they were bad for you! Anyone who does not like beans has either spent too little or not enough time on a shoestring budget. I remember that my microeconomics used beans as THE example of an inferior good. This memory puts a slight scowl on my face. Look up "inferior good" if you feel like it, because trying to describe it makes me grumpy.

So here's how you make the soup!! Note the use of red wine vinegar, which Steve thinks complements the kale quite well.  Also, I will note the soup doesn't actually seem that beany because half of them are blended to give the broth some thickness. If we make it again, we're going to bulk it up by doubling the beans. That's right, FOUR cans of beans, Josh!
