We ate these eggroll noodle salads last week, while the weather was still nice and warm in Minnesota. This is one of my faaavorite things to get when I go to Vietnamese restaurants. So refreshing ...and maybe healthy? I always ask my Mom to make this when I go home, but really it's not hard to make so I don't know what my deal is. As long as you have everything you need, assembly time is pretty quick for this salad.
Just layer:
- cooked rice noodles (just boil them for a minute or so. don't overcook them!)
- cucumber slices
- carrot shreds
- shredded lettuce
- bean sprouts
- mint bits
- cilantro bits
- hot egg rolls (cut them into bit size pieces so nothing will slow you down as you nom nom)
- grilled beef
Then sprinkle over some sauce made of fish sauce. I didn't actually follow that recipe, but maybe I will in the future since I kind of suck at making the sauce. Shame. -_-
