I love browsing Food Network's website for tips, tricks, and recipes. Guy Fieri's Creole Chicken Wrap recipe looked simple and delicious, two important criteria for choosing recipes.
I used the rub mix suggested in the recipe, but substituted chicken thighs because they have more flavor than chicken breasts. Thighs are a little less healthy but...meh. Since I don't have a grill, I broiled the thighs. Broiling doesn't provide the same smokey taste, but at least the heat is high enough to simulate a hot grill.
Once the thighs were done cooking, I took them out of the oven and let them rest a bit, then cut them into cubes. I dropped a generous portion of chicken cubes onto a piece of flatbread (personal favorite is FlatOut flatbread!), threw on some romaine and some sweet cherry tomatoes, then squeezed out a line of olive-oil mayo (half the fat and calories, still delicious!). I skipped the onion and the cheese because I was feeling particularly hungry and impatient, but I'm sure those ingredients add to the dish.
Then, I took my wrap to the window to eat, because natural light brings out the simple beauty in the ingredients. Yummo! Spicy, creamy, healthy, fresh. The recipe was so easy to follow, and I got to hang out with my brothers on Google+ while the chicken was broiling :)
